Roasted Asparagus
Method
- Preheat the oven to 400 degrees F.
- Break off the tough ends of the asparagus and peel them. Brush the baking sheet with olive oil and place the asparagus.
- Drizzle 2 tbsp of olive oil, salt and ground pepper and coat them completely. Bake them for 15 – 20 minutes until the asparagus is tender and crisp.
- Take it out and sprinkle with 1 tbsp of Parmesan and return to the oven for another minute.
Serve with lemon wedges
Notes:
You can skip parmesan part, and you can try this recipe directly on the stove top.

I love asparagus.You have to choose the leaner and younger asparagus and just stir fry with little garlic pd and salt,yum!! Looks great Priya.
This is the only way I make asparagus too..but with a little difference. I don't peel asparagus. Do we have to? I didn't know. :)
Also, along with olive oil, salt and pepper, I add a tsp of minced garlic for added flavor. Try it next time, you will like it.
Then I spread them on a cast iron skillet, and bake it(broiling or stove top works great too.)

this is the most unique and different recipes i have seen in a long time. I have started a food blog recently and was humbled at the variety and dedication in all these others.
i am concentrating mostly on my mom's and grandmom's cooking which is a mix of tamilnadu and kerala.
