Kadala Curry

Kadala curry is another traditional dishes of Kerala. Kadala curry and Puttu is the best accompaniment. Kadala curry goes well with Appam, Dosa, Idly and Chapattis. I usually make Kadala curry for Appam and Puttu.

Ingredients: Recipe for two

  • 1 Cup of Black Chana
  • To Fry: ½ onion cut into big chunks, 1 big tomato cut into big chunks, ¼ cup shredded coconut, 2 pods of garlic, a small piece of ginger, 1tsp cilantro, 1tsp roasted gram, 1tsp coriander seeds, 1tsp cumin and 2 red chilies.
  • For seasoning: ½ onion cut into small pieces, 2 cloves, 2 pieces of cinnamon stick, ½ tsp fennel seeds, 2tsp of cilantro.

Method

Pressure-cook the black chana with salt and two green chilies.

Sauté the cumin, coriander, roasted gram, red chilies, ginger, garlic, onion, tomatoes, cilantro and coconut. Allow them to cool and grind the mixture to a fine paste.

Sauté the cloves, cinnamon stick, fennel seeds and onions. Sauté until the onions turn brown. Add the ground masala and sauté for 2 minutes. Add the cooked black chana and ½ cup of water and cook for 4-5 minutes. Add salt for taste.

Garnish with cilantro leaves and serve hot.

    Hi Priya,
I tried your Kadala curry & appam recipe this weekend and it was a big hit.
I am a non keralite and it was my first trial at the appams. I had my initial reservations but when I smelt the batter after fermentation I knew it was right on! And they came out real fine and nice. I used a kadhai and got the big bowl shape too :)
    Thanks
    Aps

Hi Priya, this is Shilpa. This recipe is excatly the kind i was looking for.Thankx a million for this.I just have a doubt.Do we have to soak channa overnight before cooking? And how do we get it to sprout? This is my first time cooking with channa and so I have no idea. Please help.

    ReplyDelete
  19. Hey shilpa, soak the chana over night and in the morning cook in the pressure cooker for about 2- 3 whistles..and regarding sprouting...soak the chana in a cheesecloth or any nice soft cloth with water and cover the chana with it-- and leave it for 8-10hrs... it will sprout:)

    Hi Priya
The recipe is great..I am a Keralite myself but have not been preparing Kadala curry with cocconut..But in my in-law's place they add cocconut and prepare it the typical kerala style..My hubby loves it..I was wondering how to learn to make it..Now I am soo happy...I have already soaked the channa and ready to make it this evening..

  23. hi Priya,

I tried your recipe with a little variation.
I did not have corriander seeds, so I replaced it with corriander powder. And I did not have coconut at hand, so I skipped it. I guess it must have taken away the Kerla essence out of it, but it was wonderful! And I wanted to thank you.
Moreover, can I use dried coconut (the grated ones we get in a packet?). I would like to try it with coconut next time. Its just getting a fresh coco and breaking it and scraping the brown skin seems a chore in itself!

So now you have a new cook and a new visitor who promises to keep coming!

  24. Hi Vidwata, Good to know you made your own recipe:)yes you can add dried coconut, I add sometimes when I run from fresh coconuts:)Thanks for letting me know:)
